White Sauce Spinach pizza

Everyone deserves a slice and  with this recipe you don't have to feel guilty about it.  The flavor of this pizza is everything you want the cheese and crispy crust. This recipe is pretty easy but does take some time.

Ingredients-
4 heads of garlic
1 teaspoon olive oil
2 whole wheat pizza dough
24 oz part skim mozzarella
16 oz ricotta cheese
1 bag frozen spinach

Instructions-
Preheat oven 400 degrees.
peel off the outer layers of the garlic and then cut off the tops expose the tops of the cloves. Next drizzle with 1teaspoon of olive oil. Wrap with aluminum foil and place in the oven for 35-40 minutes. The garlic is done when completely soft in the middle. let cool and set aside.


Roll out your dough on a pizza stone if you have one if not a cookie sheet that has plenty of non-stick spray will work just fine.  Heat oven to 425 degrees bake the crust for 4-6 minutes then pull out and set aside. Well that is baking remove the garlic from the skin and mash with a fork, then mix with the ricotta. When you have pulled out the crust let sit for a minute then spread half of the ricotta mixture on the first crust as well as half the mozzarella and spinach. Bake for 18-20 minutes. Repeat for the second pizza. Serve and enjoy.

Mixed berry smoothie

This is another great and easy smoothie mix that is a great start to the day.

Ingredients-

1 Frozen Banana
1 cup frozen mixed berries 
1 cup of unsweetened milk
1/2 cup greek yogurt 
honey (optional)

Toss it all in a blender and blend till smooth. Pour and enjoy.

Apple oatmeal cookies

These are like the cookie form of apple pie. 


Ingredients - 
1 cup finely diced red apple
1 cup instant oats
1/2 cup agave
3/4 cup whole wheat flour 
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon vanilla extract 
1/8 teaspoon salt 
2 Tablespoons unsalted melted butter
1 banana
1 large egg

Instructions- 
Preheat oven to 325degrees.
Mix all the dry ingredients, oats, flour, baking powder, cinnamon and salt. In a separate bowl mix together the butter, egg, banana, agave and vanilla. Add in the dry to the wet once well mixed fold in the diced apples. On a cookie sheet lined with parchment paper and shape out the cookies. Bake 13-15 minutes. Enjoy.

Simi-healthy Strawberry Cheesecake Salad

This is a great dessert if you have a sweet tooth like me. It is a dish you can make quick and take to a party or you can just keep it for yourself. It is sweet but has the fresh fruit that cuts the sweetness of the whipped topping and pudding mixture. The best thing about this treat is you don't need a lot of it to satisfy that sweet tooth.

Ingredients- 
2 boxes cheesecake pudding 
12 oz cool whip
3 strawberry yogurt 6oz
1 Ib fresh strawberries 
3 bananas

Instructions- 
Start by slicing the strawberries and bananas. In a large bowl mix together the pudding mixture, cool whip and yogurt. Once well mixed fold in the bananas and strawberries. Let chill in the refrigerator for at least 30 minutes. Serve and enjoy.

Crash Hot Sweet Potatoes

Sweet potatoes are one of my favorite sides but i like to have more then one way and one of those ways is crash hot sweet potatoes. They are a little spicy and a little sweet and just right with many meals.

Ingredients-
2 large sweet potatoes
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon cayenne
1 1/2 teaspoon honey
1/2 teaspoon molasses

Instructions-
Preheat oven to 400degrees. Slice potatoes 3/4 inch thick. Place in a microwave safe container ( I use a glass pie pan) and cook until soft. Well, those are cooking in a small bowl mix together ground cumin,chili powder, paprika, onion powder, garlic powder and cayenne. At this point you can either add the honey and molasses to create a paste (this is what I like to do) or you can drizzle it on top of the spices they're baked. Once the potatoes are soft and cooled enough to handle brush on the paste or sprinkle on the spices and place on a baking sheet lined with parchment paper. Bake for 10-12 minutes or until brown on the edges. Serve and enjoy.

Strawberry Banana Smoothie

This is a basic smoothie recipe, one of my favorites. It is great for breakfast or a snack and it doesn't have any fake sugar or bad fat. 

Ingredients- 
1 Frozen banana 
1 cup frozen strawberries
1/2 cup greek yogurt 
1 cup milk
honey (optional) 

Throw it all in the blender and blend till smooth.

Healthy Chicken Burrito

If you are like me Mexican food is a must in life, but going out for Mexican when you are trying to eat healthy can leave you with a taco salad, which don't get me wrong taco salads are delicious but sometimes I just want a big ol'burrito. This is one of my favorite recipes its easy and a hit for everyone.


Ingredients-
3 large tortillas ( I use protein up)
1 Ib boneless skinless chicken breast 
3/4 black beans 
1/2 medium yellow onion  
1 teaspoon chili powder
1 teaspoon cumin 
Mexican cheese 
salsa (optional)
sour cream (optional) 

Instructions-
Start by heating a pan over medium heat. Next rinse chicken with cold water and pat dry, then cut in to bite size chunks. Then chop yellow onion, once done chopping in a bowl place the chicken and onion add cumin and chili powder. Toss well and add to pan. Cook for around 8 minutes until cooked though. Well the chicken is cooking drain and rinse black beans, add and cook for 1and a half minutes. Take one tortilla add cheese too taste then spoon on the chicken and bean mixture. Roll tight and on another skillet at medium low heat coated with non-stick spray, place rolled tortilla seam side down for 2-4 minutes then flip and repeat. Remove form pan and serve.

Slow cooker Fajitas

These are perfect to do for if you are always on the move. I like to prep my peppers, onion and spice mixture all together the night before and all I have to is assemble and throw into the slow cooker and it is ready when I get home from work.

Ingredients-
4 Chicken breast (boneless, skinless)
Tortillas
2 1/2 teaspoons Chili powder
1 teaspoon paprika
3/4 teaspoon pepper
1 teaspoon salt
3/4 teaspoon ground coriander
4 cloves minced garlic
2 Orange bell peppers
2 Green bell peppers
2 red bell peppers
2 cans Rotel original
1 Yellow onion

Instructions:

Start by chopping all the bell peppers and garlic. Pour  one can of the Rotel into the bottom of the crock-pot and put half of the peppers and garlic over the tomato mixture. Next mix all the spices together. Chili powder, paprika,pepper,salt and coriander. Wash chicken with cold water and pat dry.  Rub the spice mixture on both sides and place the chicken in the cooker. Put the remaining peppers and garlic on top of the chicken as well as any extra spice mixture. Place cooker on low for 6-8 hours or on high for 3-4 hours. When ready to eat shred the chicken, serve and Enjoy.

Healthy Blueberry Muffins


I suck at making breakfast in the morning! So these are perfect to make the night before and heat up with a little butter in the morning.

Ingredients: 


1 1/2 cups Fresh blueberries 
1/2 cup Whole wheat flour 
1 Banana 
1/2 cup all purpose flour 
1 1/2 cups oats 
1/2 cup granulated sugar 
1 egg 
1 cup milk 
1/4 teaspoon salt
1 Tablespoon baking powder 
2 Tablespoons canola oil
2 teaspoons vanilla extract 

Instructions:
Pre-heat oven to 400 degrees
In a small bowl mix together banana, egg, milk, sugar, canola oil and vanilla extract. set aside. 
In a medium bowl mix the two flours, oats, salt and baking powder. Mix the wet and dry together and add blueberries. Use tin liners and fill 3/4 of the way with batter. Bake for 20 minutes.

Broccoli Tots

Great Substitute for Tater Tots 

I like to make these in place of fries or tater tots they taste good and don't have that greasy taste. This is a nice way to serve kids broccoli. 

Ingredients-

2 cups Frozen broccoli
2 Eggs 
2/3 cup Italian breadcrumbs
2/3 cup Panko breadcrumbs
1/3 cup Cheddar cheese 
1/4 cup Yellow onion 
2 Tablespoons Parsley 
1/2 teaspoon Pepper
1/2 teaspoon Salt 

How to: 
Preheat oven to 400 degrees 
Start by bringing a medium pot of water to a boil. Once at a boil quickly blanche the broccoli for one to two minutes then stop the cooking by removing form the boiling water to a cold water bath. strain. Next finely chop the Yellow onion, Broccoli and Parsley. In a medium bowl mix everything together. Once everything is well mixed shape into tots. Line a baking sheet with parchment paper and place your tots on the sheet and put in the oven for 15-24 minutes flipping halfway through
. Let cool and enjoy.

BBQ Bacon Turkey Burger

Ingredients- 
5 Slices Turkey bacon
1 Pound lean ground turkey ( I used 93% lean) 
1/2 diced white onion 
1 clove minced garlic
4 Tablespoons BBQ sauce ( I used Cookies Original)
1/4 teaspoon cayenne 
Buns 
Pepper jack or provolone cheese 

These burgers are simple and delicious packed with flavor and not too bad for you either. I love making these in the summer they are a perfect way to cut out some red meat for turkey. 

Tip: I let the burgers set in the fridge for a few minutes to set the flavors before throwing them on the grill. 

Instructions:

Cook turkey bacon, once cooked let cool for a few minutes then chop and set aside. In a medium bowl mix together the ground turkey, chopped turkey bacon, bbq sauce, onion, garlic,cayenne, salt and pepper. Divide and shape into four patties. Heat Grill to medium heat. Once there put burgers on grill 5-8 minutes on each side or when the internal temp is 165. When you have around a minute left put the cheese on the burgers and remove when melted. Plate and Enjoy.

Asian Noodles

These noodles are Easy and Delicious. 


Asian Noodles 

Ingredients: 

  • Whole Grain Spaghetti  
  • 1/4 cup Soy Sauce
  • 2 Tablespoons Sugar
  • 2 cloves Garlic, Minced
  • 2 Tablespoons Rice Vinegar
  • 3 Tablespoons Pure Sesame Oil
  • 2 pinches Crushed Red Pepper 
  • 2 Tablespoons Vegetable Oil
  • 2 Green Onions
Start by bringing a medium pot with 6 cups of water to a boil. Well, the  water is heating up whisk together all the ingredients ( except noodles and green onions) in a bowl. 
Water should be at a boil, drop noodles (up too 12oz of noodles) in to the boiling water. Boil for 5-7 minutes until the noodles are al dente. Drain Pasta, place back in the pot (not over heat) and add in the sauce mixture, stir together serve and enjoy.

Introduction

Hi, everyone my name is  Ali Lindo, I am a college student who is just trying to eat a little better. I am a senior and over the past three years I have been living on campus without a kitchen, meaning I  either ate not so good cafeteria food or ate out. Neither would be my first choice and now that I am living off campus with my own kitchen I can make my favorite healthy recipes.  The recipes I make are easy and quick for the most part, cause I know there are ten million other things you need to get done.
