Broccoli Tots

Great Substitute for Tater Tots 

I like to make these in place of fries or tater tots they taste good and don't have that greasy taste. This is a nice way to serve kids broccoli. 

Ingredients-

2 cups Frozen broccoli
2 Eggs 
2/3 cup Italian breadcrumbs
2/3 cup Panko breadcrumbs
1/3 cup Cheddar cheese 
1/4 cup Yellow onion 
2 Tablespoons Parsley 
1/2 teaspoon Pepper
1/2 teaspoon Salt 

How to: 
Preheat oven to 400 degrees 
Start by bringing a medium pot of water to a boil. Once at a boil quickly blanche the broccoli for one to two minutes then stop the cooking by removing form the boiling water to a cold water bath. strain. Next finely chop the Yellow onion, Broccoli and Parsley. In a medium bowl mix everything together. Once everything is well mixed shape into tots. Line a baking sheet with parchment paper and place your tots on the sheet and put in the oven for 15-24 minutes flipping halfway through
. Let cool and enjoy.

  1. wow, this is awesome. I don't have any small children which this would be great for, but I have a teenager who loves to dip. with a cool ranch dip or hot cheese dip, she would devour these...and so would I. It's healthy too because your not frying them so you don't have all that oil. I definitely will make these and forward the recipe to my friends.
