Slow cooker Fajitas

These are perfect to do for if you are always on the move. I like to prep my peppers, onion and spice mixture all together the night before and all I have to is assemble and throw into the slow cooker and it is ready when I get home from work.

Ingredients-
4 Chicken breast (boneless, skinless)
Tortillas
2 1/2 teaspoons Chili powder
1 teaspoon paprika
3/4 teaspoon pepper
1 teaspoon salt
3/4 teaspoon ground coriander
4 cloves minced garlic
2 Orange bell peppers
2 Green bell peppers
2 red bell peppers
2 cans Rotel original
1 Yellow onion

Instructions:

Start by chopping all the bell peppers and garlic. Pour  one can of the Rotel into the bottom of the crock-pot and put half of the peppers and garlic over the tomato mixture. Next mix all the spices together. Chili powder, paprika,pepper,salt and coriander. Wash chicken with cold water and pat dry.  Rub the spice mixture on both sides and place the chicken in the cooker. Put the remaining peppers and garlic on top of the chicken as well as any extra spice mixture. Place cooker on low for 6-8 hours or on high for 3-4 hours. When ready to eat shred the chicken, serve and Enjoy.

Healthy Blueberry Muffins


I suck at making breakfast in the morning! So these are perfect to make the night before and heat up with a little butter in the morning.

Ingredients: 


1 1/2 cups Fresh blueberries 
1/2 cup Whole wheat flour 
1 Banana 
1/2 cup all purpose flour 
1 1/2 cups oats 
1/2 cup granulated sugar 
1 egg 
1 cup milk 
1/4 teaspoon salt
1 Tablespoon baking powder 
2 Tablespoons canola oil
2 teaspoons vanilla extract 

Instructions:
Pre-heat oven to 400 degrees
In a small bowl mix together banana, egg, milk, sugar, canola oil and vanilla extract. set aside. 
In a medium bowl mix the two flours, oats, salt and baking powder. Mix the wet and dry together and add blueberries. Use tin liners and fill 3/4 of the way with batter. Bake for 20 minutes.

Broccoli Tots

Great Substitute for Tater Tots 

I like to make these in place of fries or tater tots they taste good and don't have that greasy taste. This is a nice way to serve kids broccoli. 

Ingredients-

2 cups Frozen broccoli
2 Eggs 
2/3 cup Italian breadcrumbs
2/3 cup Panko breadcrumbs
1/3 cup Cheddar cheese 
1/4 cup Yellow onion 
2 Tablespoons Parsley 
1/2 teaspoon Pepper
1/2 teaspoon Salt 

How to: 
Preheat oven to 400 degrees 
Start by bringing a medium pot of water to a boil. Once at a boil quickly blanche the broccoli for one to two minutes then stop the cooking by removing form the boiling water to a cold water bath. strain. Next finely chop the Yellow onion, Broccoli and Parsley. In a medium bowl mix everything together. Once everything is well mixed shape into tots. Line a baking sheet with parchment paper and place your tots on the sheet and put in the oven for 15-24 minutes flipping halfway through
. Let cool and enjoy.

BBQ Bacon Turkey Burger

Ingredients- 
5 Slices Turkey bacon
1 Pound lean ground turkey ( I used 93% lean) 
1/2 diced white onion 
1 clove minced garlic
4 Tablespoons BBQ sauce ( I used Cookies Original)
1/4 teaspoon cayenne 
Buns 
Pepper jack or provolone cheese 

These burgers are simple and delicious packed with flavor and not too bad for you either. I love making these in the summer they are a perfect way to cut out some red meat for turkey. 

Tip: I let the burgers set in the fridge for a few minutes to set the flavors before throwing them on the grill. 

Instructions:

Cook turkey bacon, once cooked let cool for a few minutes then chop and set aside. In a medium bowl mix together the ground turkey, chopped turkey bacon, bbq sauce, onion, garlic,cayenne, salt and pepper. Divide and shape into four patties. Heat Grill to medium heat. Once there put burgers on grill 5-8 minutes on each side or when the internal temp is 165. When you have around a minute left put the cheese on the burgers and remove when melted. Plate and Enjoy.

Asian Noodles

These noodles are Easy and Delicious. 


Asian Noodles 

Ingredients: 

  • Whole Grain Spaghetti  
  • 1/4 cup Soy Sauce
  • 2 Tablespoons Sugar
  • 2 cloves Garlic, Minced
  • 2 Tablespoons Rice Vinegar
  • 3 Tablespoons Pure Sesame Oil
  • 2 pinches Crushed Red Pepper 
  • 2 Tablespoons Vegetable Oil
  • 2 Green Onions
Start by bringing a medium pot with 6 cups of water to a boil. Well, the  water is heating up whisk together all the ingredients ( except noodles and green onions) in a bowl. 
Water should be at a boil, drop noodles (up too 12oz of noodles) in to the boiling water. Boil for 5-7 minutes until the noodles are al dente. Drain Pasta, place back in the pot (not over heat) and add in the sauce mixture, stir together serve and enjoy.

Introduction

Hi, everyone my name is  Ali Lindo, I am a college student who is just trying to eat a little better. I am a senior and over the past three years I have been living on campus without a kitchen, meaning I  either ate not so good cafeteria food or ate out.
